You should try starting RegShot as Administrator, and as far as the "not responding" is concerned, just give it time: after a minute or possibly more the "not responding" text will disappear and the program will deliver the expected results.

Regshot is not handling Windows message while processing, that leads to "(not responding)" in the title. It is still working, just let it work.
Should be addressed when re-creating the User Interface in the future.

RegShot is no reacting on windows update requests when it is collecting data.
After collecting all data it should display its window just normally.
The last revision from trunk works fine.
Please test the latest 1.9.0 beta.
