I am a bit of a newbie here.

I have a Black MacBook and want to install Ubuntu and Apricity OS alongside OSX 10.7.
Is this possible using rEFInd?
Would the boot screen show two identical linus symbols? Or woiuld it show one Unbuntu and one Arch symbol?

rEFInd can handle as many OSes as you care to throw at it, although of course at some point the display will become cluttered and you may run into issues if your EFI System Partition (ESP) is too small.

I'm not familiar with Apricity, so I can't comment on it specifically. If it's particularly primitive, it might lock you into BIOS-mode booting, which would limit your options. That's probably not the case, but I can't make any promises about a distribution I've never used.

As to icons, you can customize those however you like, as described here.
