So I have refind installed and am currently dual booting Ubuntu and OS X El Capitan off a Macbook Pro. I want to change the Ubuntu OS to ArchLinux. How would I go about doing this? Erasing the partition? I don't mind deleting all data on the Ubuntu side, though I do mind deleting the OS X data.

You should be able to run the Arch installer and tell it to erase only the Ubuntu partition. It's probably also best to not install another Linux boot loader (like GRUB or SYSLINUX).
Note that I can't promise this will go smoothly; bugs and human error sometimes cause OS installations to do collateral damage. Thus, I strongly recommend that you back up your current OS X installation, or at the very least your important personal data.
