rEFInd supports whatever the firmware supports. If the Apple IR remote looks like a keyboard to your firmware, then it should work; if not, it won't. It's theoretically possible to extend support by writing EFI drivers, but I have no immediate plans to write such a driver for the Apple IR remote.
