I successfully deployed rEFInd in our Apple classroom to support tripleboot. Thank you for this tool.
However there is slight problem with teacher's Mac mini.
There are two displays connected to it (HDMI : monitor, miniDP: projector). When Mac mini boots into rEFInd only single display shows GUI. It seems target display is chosen at random (sometimes it is projector, other time it is monitor).
I would like to mirror rEFInd GUI to both displays.
Is there anything I can do to achive this or would it require implementing new feature?

I'm afraid I don't know of a way to do this at the moment. You might try playing with the resolution option in refind.conf -- it's possible that different resolutions might correspond to different monitors, but at best that will send your display more consistently to a single monitor, not mirror it.
