Limit is simply the maximum deflection you will alllow your rudder to have.

Gain decides how agressive you want RCAP to keep your boat on course.
Very agressive will create constant rudder changes. A lesser value will
make more it smoother.

As to what is best, too many unknown factors to determin that (your
servo setup, your rudder etc.)

On a boat, I would not worryr as much, for a plane it is important to
start small otherwise too much of a bank and the plane will loose too
much altitude and might not recover.

As for a figure 8...  that's what the planes do as well when they reach
the last waypoint etc. It take a decent amount of time running in one
direction before courses can be calculated etc. by the GPS. You need to
make your way points a far distance from each other to really be able to
test out the RCAP.
