I'd really like to use this script to backup two other raspian based installs I have. So 1) Can it be adopted and 2) Is it permissiable to modify and utilize it for other raspian or even just other asterisk installs?

It should basically also work on plain Raspbian, but eventually the script makes some hard-coded assumptions on partition sizes which might not fit for all Raspbian versions. So just go ahead and try it out, and of course you are welcome to adapt and modify the script to your requirements.
