Does this actually mean that they want "non-text" audit trail
information as opposed to textual audit trail information?

I wonder what an audit trail would entail here.  The obvious thing to
do would be to simply cryptographically sign the mzML file using
something like PGP.

If you're seriously considering this, I suggest that someone grab it
immediately.  (I've had good luck with gandi.net as a registrar.)
