Is it possible to restrict a user to only have access to POP3 or IMAP, rather than both?

Yes, if you're running dovecot here's a description from the dovecot wiki: http://wiki2.dovecot.org/Authentication/RestrictAccess
But I think there's at the moment no configuration option in Postfix Admin for this.
