I've used GLUI, and agree that it is easy to use.  (Haven't really used 
plib yet, so I can't compare the two.)  However, what I'm working on now 
involves seriously modifying & extending whatever code I start from, and I 
haven't made much progress in understanding the GLUI code.  I'm hoping pui 
will be easier to work with.
