my first question is this. is there a way to turn off the window icon of being the user's buddy icon? it just looks silly having really small version's of people's icons in the task bar.
Below the menu bar, I beleive that space where the username and buddy icon are is wasted space. the tab and/or window title already shows the username.
I think the message bar has way too much padding.
Now, the input text box, that needs some padding. It's too close to the edges of the box.

To remove the first point: In Preferences unselect Conversations > Show detailed information
To remove the second point just turn off the formatting toolbars: In the conversation window unselect Options > Show formatting toolbars
As for the padding issues go to pidgin.im, look for previous tickets on the issue, and if necessary create a new ticket.

is it possible to customize the message window? i'm on windows.
I like the buddy list because of how minimalistic it is, but when I opened the message window, not so much.

i do not have your experience , i use it in windows i can give mesage windows FULL customisation
at the moment i have minimalistic see 2 examples where your problems are completely solved:
