Some useful plugins are now part of Gaim which were previously only available through the guification plugin pack
Seems to have less memory leaks. After multiple days of running is still under 40Mb with 21 accounts connected. beta5 would take up >100Mb
Other than that, I haven't noticed anything specifically.
It does seem much stable and faster, sometimes on beta5 it would randomly freeze up when opening an IM to a buddy.

Sean: Barring any seriously major new issues, we expect this to be the final beta release before 2.0.0. This has a bunch of cool UI changes, some Google Talk features, a bunch new plugins, and other goodness.

Evan: My first news! I knocked out a nice collection of crashes, thanks in part to my ever-patient Adium beta testers. Gaim 2.0.0 is going to be delicious. :)

Not sure if this is actually a new gtalk feature but I am finding that gaim is pulling *all* of my gmail contacts in as entries under group "buddies"...spent a fair while sorting them and deleting them (for non-gtalk entries) only to have them all pulled in again today when the account logged on today.
Otherwise, I'm very pleased with b6 as I haven't experience various crashes and hangs as I did occasionally with the last couple betas.

I noticed that you can get mail notifications on your jabber accounts now... gmail notifications from gaim FTW.

Yeah! MSN File Transfer is the main issue that keeps away from using Gaim because it's too slow to be usable :(
