If the name in question is yours you can set your account an alias in the Modify Account dialog to use a shorter name instead. If the name is your buddies then you can assign them an alias via the Conversation menu or the buddy list entry for the buddy to give them a shorter name. You cannot, currently, remove the name entirely (well, a plugin could possibly do it).
If you disable the logging related preferences then there will be no message logging.
Under linux pidgin uses the locale settings for your account. Under Windows see the FAQ.
