Since upgrading to 2.0 betas 4 and 5 I have experienced the same problem on more or less a daily basis. Within a day of launching gaim, the window repainting will get completely out of whack. Conversation boxes will go all black, clicking around will cause other strange paint issues and the process will eventually die in a hard crash. I have since gone back to 1.5 since 2.0 is pretty unusable for me in that state.
I was using the GTK bundled with each beta and running on XP. Anyone else seen this issue?

If you are using the WIMP GTK+ theme and the Classic Windows theme, there is a bug in gtk+ which leaks GDI objects and eventually crashes, gtk+ cvs has been fixed but there hasn't been a new release, the solution for now is to either not use the Classic theme or not use WIMP.
