At the moment, VAT is hardcoded in as being 0%, 5% 17.5%.
However, I really want to change that to be a user
configurable number (which is why I already added the
ability to set the symbol for the currency). I'll also put
in a configurable field for what to call your tax.

This feature has been requested by someone in New Zealand,
also, where they call the same tax GST. So, I will see about
slipping a configurable setting for "what you call
sales/purchase tax" into the final 1.0 release and if I
can't do that, I'll put it in a 1.1 release.
The current 1.0beta1 release DOES allow you to set the sales
tax rates.
