Among JavaScript libraries we can use to implement this http://nicolas.kruchten.com/pivottable/examples/ looks quite interesting. However, these plugins needs all the data to be pre-loaded to the client side which makes this feature usable only for very small tables.
So, I am wondering whether this is really in scope for phpMyAdmin.

Given the limitations, maybe it's too much to implement it. I expect that most users have a client application to interact with their data; we try to make it easy to work with data but for full visualization and complex display a user really should use their own application.
An interesting idea, but perhaps a bit outside the phpMyAdmin project scope.
