I forgot to update one sibling's pedigree. How can I go back and edit that field? I don't see it anywhere?

No, you're right, its not editable post entry through any of the GUI fields. I suppose it should be, although personally I don't use it except where the pedigree is anything OTHER than 'birth', so would very rarely need to edit it..
You can however edit the raw GEDCOM.

I concur. At first I thought it "had" to be used but because it's not checked by default, I was having some checked, some not and therefore inconsistent. So, as kiwi (and others) told me, it's better used when a person's relation to the family isn't by birth. Then, too, it becomes more obvious to the viewer.
I do the same with Marriage. Unless there's reason to be specific, I don't specify type of marriage, unless compelling reason to do otherwise.

Came across this problem myself. The only solution I found was to manually enter it in.
While viewing the person, choose "Edit" under "Options for Individual" and choose "Edit raw GEDCOM record"
After the "1 FAMC @F####@" line, add:
2 PEDI birth
where you can change Birth, Adopted, Foster, Sealing.
