Reordering families (and reordering children) are two very common activities.
Reordering families needs to take place when one adds a spouse and later adds a second spouse that preceded the first.
INDI > EDIT > REORDER FAMILIES
The same could occur with an adopted family (1 FAMC) entered first and then later a birth family. Unfortunately, there is no utility for this function and it must be done manually, but fortunately, it is not a common task.
For reordering children:
Family record page > EDIT > Reorder Children (manually or by birth date)
