I have a few indis who have been linked to their adoptive families, and subsequent husbands/wifes.
Now that I have a bit more information I would like to link an indi to a single parent - mother already in the database. (Father is yet unknown).
I can't see "Link this person to a Single Parent" down the bottom of the Close Relatives page.
In the Quick Update the 'Family with Parents' is already fulfilled by the adoptive parents.
How can I do this please?
Do I still have to add a husband to the mother temporarily, then add the child to an existing family, then delete the father as per information on the wiki? Or is there an easier way?

Ok, I went to the parent and chose "add a child as a one parent family" - is that what you meant?
Entered a name only. Took note of the Indi IDs and merged them using the function in the Admin area, leaving selected all the full information from the proper record, deselecting the name from the second but leaving the single parent family.
The process seems to work great except now all I can see on the INDI record is the header - the part where you see the name of the INDI, birth and death!
When I view the Quick Edit all the data is there about parents family, family with etc.
Did I do something wrong?

Check the RAW code and be sure you set the PEDI to "birth" for the new family and "adopted" for the original one. The page is probably struggling with which FAM record to display, and choking. You can review the VIEW PAGE SOURCE to see if an error exists.
Another way to do this would have been to temporarily cut the 1 FAMC record from the INDI record, save changes, use QUICK EDIT to add the mother, creating the FAM record, save and then simply repaste the original 1 FAMC tag back into the INDI record. Removing 1/2 of the FAM record pointer (the 1 CHIL would have remained in the original adopted family) would have 'freed up' the PARENT tab of the Quick Edit.
These are so few and far between that to develop a linked interface to accomplish this would be a big waste of time and only add more confusion to the edit process.

It didn't have the birth family information in the raw gedcom at all so I added
1 FAMC @F3654@
2 PEDI birth
And the INDI showed.
Believe it or not I have at least half a dozen of this type of adoption/birth, that I know about, to do - that's why it was worth asking about the 'right' way of doing it. Seems to run through several generations of various lines.
The other scenario that I have is that many children were put into foster homes or orphanages by their birth mother or parents, especially around the 1900-1940s, which I understand I can only add a note for.

You can "add a new parent as a one parent family".
This saves having to create/delete a temporary spouse.
You can then merge the new parent with your existing indi.
