Children and mothers belong to a family, even if the family consists of only one parent.
You need to follow these steps, but remember to accept the changes at each step or have your userid's account privileges set to auto-accept changes:
From the Personal Details page, Close Relatives tab of the mother, add a new husband. Don't fill in any of the details, but click "save".
This will create a new person with unknown details. It will also create a new family and attach both persons as spouses to this newly created family.
Make note of this person's ID, since you'll either want to re-use the ID for similar situations, or you might wish to delete this person.
In the "Options for family" section of the Family details page of this newly created family, you'll see an "Edit family" menu. You choose various menu options to adjust or correct the various members of this family.
To create a new person and add this person as a child to the family, you select the "Add a child to this family" option.
If the child already exists in the database, you need to use the proper option on that person's Personal Details page, Close Relatives tab.
Use the "Change family members" option to produce a list of that family's members. You can delete the "unknown" husband here, or change the husband to someone already in the database.
Remember that "husband" is just a label, and doesn't imply that the spouses were actually married, or even that they are of opposite gender.
After having deleted the "unknown" husband from the family, that person becomes completely unattached in the database. It's now safe to delete that person from the database or re-use him for the same purpose in another single-parent family.

As this is more common, the programmers added a much easier procedure for this than Gerry's suggestion.
Navigate to your single parental INDI (mother or father) if in the database.
Select Close Relatives tab.
Scroll to bottom and select "Add a child to create a one-parent family" link.
Add your child and the FAM record is automatically created.
You can also use Quick Edit Update, select spouse tab and scroll down to ADD A CHILD, but this would not be the recommended method, particularly as I don't recommend using QUick Update at all (no sourcing).
If the child already exists in the DB, then you must add to the parent a dummy INDI and then merge it with the existing person.
