I dont think that the ASSO tag will be of much use, since this tag is intended as a cross-reference between individuals that are both recorded in the database. Usually, an officiant isn't related to any of the people in the database and therefore wouldn't be an individual therein. Of course, you COULD add these persons as "unrelated" individuals, but this could be lot more trouble than it's worth.
I think you'd be best advised to use NOTE.

You could, but usually it refers to one of six previously defined roles in events.
