[phpesp-general] configurable value for missing value

As something of a follow up to my earlier suggestion (or maybe bug report) 
on the handling of missing values with radio buttons, it dawned on me that 
it would be nice to be able to configure a default value for fields missing 
values.

I have not tested it myself, so I do not know how different field types 
handle missing values when a form is stored.  It would be nice to be able 
to tell the program to use "*" or "-" or whatever so that all fields left 
empty by the respondent would have the same value in the exported data.  I 
know that it would have saved me a great deal of time on a recent project 
when it came time to clean up the data set for analysis.
