Hi I was wondering if there's a way to disable the if you switch from "In Progress" to "Undrafted" and have already started to draft, all data related to picks will be immediately deleted?
After every serpentine round we usually pick new cards and change the draft order but as soon as I change the status it deletes the draft.

Sorry for such a slack in response! I partially blame my phone because responding in [textarea] response boxes is almost completely broken - I tried to respond the same day and the phone frustrated me enough to where I forgot about it by the time I got to a computer.
Anyways, the reason why you're seeing all of your picks get wiped on the change of draft status is that there are some pre-draft jobs that PHPDraft has to run - mainly the creation of draft pick objects for each manager, which must also be done according to the draft style (standard/serpentine) and the managers involved.
When I wrote PHPDraft initially, it was the easiest path forward to get something out the door. What you're looking for is not impossible, but it's not straightforward or easy. I encourage you if you can, to try to figure something out in the code, and if you get something working, please open a pull request and send it back my way.
If it's enough of a feature that others may be interested in, I may consider it for a future release of PHPDraft. Until then however, you're on your own to figure this out. I will be happy to assist you if you have any questions, though.
