LDAP permits you to remove individual values of an attribute (remove by 
value) as well as removing an entire attribute.

So yes, you should be able to do this. Something like the following 
LDIF fragment should work.

dn: cn=Ty Coon,o=Yoyodyne Corp,c=US
changetype: modify
add: X
X: D
-
delete: X
X: C
