In the sreen /crmsfa/control/myHomeMain (pending inbound emails) you can add a unknown emailadress to a new lead, person, account or partner.

I think it is a lot more convenient to add the unknown emailadress also to a existing customer. This because many customers are sending emails from different mailadresses. Particular when it are private persons.
