Unfortunately we don't have this feature on opensync, today. It is in our 
wishlist (I think it will probably come with the merging feature, as once we 
have a finer control on the fields on each side to allow merging, we can also 
have control on conversion of fields between the both sides, also).

Have you used the "Archive Old Entries..." action in the File menu? It have 
worked here (KDE 3.5.4 on Mandriva Cooker). I just needed to select 
the "Delete only, do not save" option.
