OpenSTA should be capable of doing exactly what you wish. There is lots to 
read at opensta.org. Check out the FAQ and "getting started" pages. The one 
thing that I would want to prove to myself before investing a lot of time 
with opensta on this project is to see if it will record and playback with a 
network connection over a modem. I seem to remember a warning on the 
recording gateway configuration panel that it might not work with either VPN 
or modem connections. Should only take you a few hours to read the doc, 
install opensta, and test it to see if it works.
