The project page states that support for Ruby is coming in the future - when however, I do not know.
Python is a pretty potent and powerful language, and wildly easy to learn - you may be able to get what you're after just by fiddling with some python.

It's a very nice project, I currently learn Ruby and I'd really like to connect industrial data through an OPC server !
If the support dosent come soon, Is there any solution to use OpenOPC with Ruby ??
