Both my wife and I have simple gallery installed but when we tap the image in open camera, most of the time it says it can't find a gallery app. Occasionally it works though. Can this get fixed please?

I experience a similar behaviour, but for me it seems to depend on whether I save to the SD card with SAF (only Google Photos is used as gallery app) or to the internal memory (I can choose to use the Simple Gallery app). Simple Gallery can open the folder with the pictures manually.
