Currently all pictures goto the DCIM/open-camera folder
Android shows pictures found via its media scanner as different albums in the stock-gallery app
not all pictures have the same purpose
* some are friends and family pictures
* some are documents
* some could be some purpose oriented
* some may be of temporary relevance
The purpose implicitly may mean a person may want to archive or store them differently
* to eventually copy/transfer to a photo-folder-stash
* to move to a electronic document repository
* to move to some other folder-stash
* to delete/get rid of after duration of purpose
Being able to select the purpose ahead of taking the picture avoids the task of filtering or sifting through later-on, which could be weeks after the pictures are taken.
A method to pre-select destination folder based on purpose could be useful, which stays in effect until changed again.
An alternate way to achieve this is to use different camera apps for different purposes.
For instance the stock android camera app goes to DCIM/camera

At present, under settings->more camera settings -> folder
it is possible to change folder. Maybe such options do not have to be buried deep.
Alternatively a concept of profiles, can be used to load settings suitable to certain purposes.
Once you've changed the folder, you can long-press on the Gallery icon, and it will show a list of recent save folders. So yes, it's a bit fiddly to initially set up various folders (note, you'll have to exit out the settings each time for it to take effect), but once this is done, long-pressing on Gallery allows you to quickly change between those folders. Is this the sort of thing you are after?
At some point I'll add an option to select a new folder directly from long-pressing on Gallery...
