I wrote Mark and asked him a question on how to use the camera to get the location data throughout the video instead of just for the first frame. He answered super quickly and helped me solve the issue, so I am posting the reply here just in case someone else is looking for the same information.
There is the feature Settings/Video settings/"Video subtitles" which will generate a subtitles .SRT file which will (if geotagging is enabled) also contain the location for the entire video.
The .SRT file can be then used of course to convert it to .GPX for example.

Hi Toni, thanks for the heads-up! It si now enabled on the phone hat is used as a dash camera. This feature is explained in the 'Open Camera Help' page at https://opencamera.org.uk/help.html but I have missed it, even if I have read it several times over.
