I want to switch to Hedgecam 2. I love Open Camera, but HC2 just has more customization options.
Unfortunately, unlike Open Camera, HC2 doesn't have an FPS indicator in video mode. Is there anything I can do about that without knowing anything about coding (Android or otherwise)?
FPS indicator is crucial when using manual ISO/exposure. It's 30 FPS or bust.
I know I might sound like an asshole asking for help with software that's being maintained by another person, but it's hard to contact the developer (Caddish Hedhehog).

Sure it's fine to ask, one of the benefits of Open Source is it allows for forks where people have different preferences on what they want to use.
On FPS, if Settings/"Camera API" is set to Camera2, you should see the FPS being shown on-screen when video recording has started? One thing to beware of those is that it seems video recording and frame rates can be unreliable, it's probably worth checking on your device that the resultant videos do have a frame rate that matches what was shown.
Out of interest, are there particular customisation options you'd be interested in using? I'm wary of just adding customisation for the sake of it - it risks bloating the UI, makes a greater burden on testing, could be exposing options that are less optimal - and in practice I rarely get requests on this. So I'd like to base this on user requests of "I'd like control over X" and not simply "But an Open Camera fork has these options".

As far as other kinds of functionality are concerned, I likeHC2's:
VERTICAL ISO (etc.) sliders
the fact that I can put pretty much the whole interface on one side, set the layout to horizontal only and stop worrying about anything moving or being out of reach of my thumb

noise reduction mode. I tested it a little bit and I think it's useful in some cases. The end result is slightly blurry, but the noise is indeed less noticable.
options. The sorting is more intuitive. I never liked Open Camera's "other camera controls" category. I feel like it should be merged with others.
