i must have changed a setting because everytime i take a picture it takes 3 pictures - all different exposures.
any idea what i've changed and how to change it back?

See the popup menu (three dots icon), what Photo Mode is highlighted? I am guessing you've set "Expo {}", so change back to "Std" for default behaviour.

Good to know diff between Expo & Std. Is it possible to merge the three pictures to get a perfect blend of the colour & contrast in this Expo mode.

This is the HDR photo mode - as in that will automatically take the three shots and merge them into a single shot, if that's what you're after?
Alternatively there are HDR applications that will allow you to merge the three expo photos into one. For Android, there's my own Vibrance HDR ( play.google.com/store/apps/details?id=uk.org.opencamera.vibrancehdr ) (has ads, not open source). For other platforms and develpoed by other people, one free choice is Luminance HDR ( http://qtpfsgui.sourceforge.net ).
