I can't get Open Camera to record stereo audio on my videos. All my audio comes out mono. (in fact I get the same problem with DolbyOn and ManualCameraDSLR Lite, but I much prefer Open Camera).
I'm using a Google Pixel running Android 10 and a Tascam DR-40x as a stereo USB Microphone.
However, I can record stereo audio using Wave Editor with my Pixel-Tascam setup (and set to the default system USB audio) so I know it's possible.
I've tried ALL the various iterations available in audio settings, including 'unprocessed, external mic, default' etc. All the video formats 'H264, HEVC' etc; Camera2 API, Camera1 API etc, all to no avail.
Weirdly, I have an EE Hawk running Android 7.0; and on this device Open Camera DOES record stereo audio via my Tascam DR-40x.
Any advice on how to get Open Camera to record stereo audio on my Pixel-Tascam setup would be much appreciated.

I have the same problem. Using a MOTU M2 stereo audio interface ==> Android phone, with Open Camera App to record video, I get only mono audio. With USB Audio Recorder Pro recording just audio, I get stereo. (I get the same behavior on my old inexpensive phone, a Moto G6, and my newer expensive phone, a Pixel 7 Pro.)
