I'm running Open Camera on Cyanogen 12.1 (Android 5.1.1). When I tap the thumbnail I'm prompted for which gallery app I'd like to use. However only the built-in Gallery app allows me to select Always. The other apps in my list must be selected each time. This seems like it might be a bug of some sort.
Note that there's nothing / no additional text (like "Just Once" or "Always") below "QuickPic" in the image above. Scrolling stops there.
Any ideas?

I'm not sure why this is, it may be a bug in those other gallery apps or possibly more likely something up with the phone itself. The picture doesn't show for me?

I've struggled with this nonsense in Android 5 for some time too and I have finally found a solution - although it's rather a hassle. What other people are saying on the web is that if you use a different app once (e.g. click on QuickPic), that app should be the preferred one the next time (that is, you should get a message saying "Complete action using QuickPic" and should be able to choose Always from there).
This does not work. At least it didn't work on my Nexus 5, Android 5.1.1. I tried uninstalling apps, clearing defaults for Gallery, Photos and QuickPic - doesn't work.
One thing that finally worked: Settings -> Apps -> ... (The Three Dots) -> Reset app preferences.
After that, you will have exactly ONE CHANCE to choose the preferred photo application (as no app will be pre-chosen this time, all three should be equally available) in OpenCamera.
Also please note that "Reset app preferences" is a nuke - it destroys ALL your default app associations, all your blocked notifications, all background data restrictions etc. It's a pain in the ***, but nothing else ever worked for me :(
