I don't understand why the minimum shutter speed in auto is 1/25s on my Samsung S7. It could go down to 0.2s in manual mode with OpenCamera. 1/25s is really fast resulting in very high ISO and a grainy picture when it's a bit dark. This phone has OIS, it is usually possible to take a picture at 1/5s without shaking.

It would be great to be able to set the minimum exposure time for auto mode or a maximum ISO that the exposure would automatically match

Auto means it's up to the device (or camera driver, whatever), so out of my control I'm afraid. I don't know why Samsung do this (or why they make it different behaviour for third party applications, if that's the case). There isn't any ability for me to set minimum/maximum values in auto mode as far as I am aware.

Oh I understand, thank you for your answer. I think the GCam port do it but it's probably because the do some scene exposure computation within the app, no other camera app use a slower shutter than 1/25 indeed
