Open camera has a checkbox for choosing to show time or not, it can be a little hard to find because it has the title: "Show time", this item perhaps could be helpful in rare situations. When one is so badly disoriented as not knowing the current date, it does not help if Open Camera shows it. And it can be easily seen from Android OS.
What really are needed are the key configuration settings, at least:
1) Current EV setting. This is currently extremely painful to determine because the value is not easy to see even from the popup dialog.
2) ISO mode, the current ISO value can be shown, but not the mode (auto/manual/fixed). At least could be color coded.
3) Shooting mode.
4) Focus mode. The icon.
5) MP size.
6) Timer value.
7) Repeat value.

The most critical parameters should be visible, just like they are visible on all actual/real cameras. Naturally they could be optional, similarly as the many of the GUI elements currently are. Typically items like time, date and storage space are not critical info, every sensible photographer does know them before a shooting session. Configuration settings that are critical for successful performance - in the heat of a shooting session - needs to be visible.
What comes to the worries of overpopulating the preview, there is a perfect solution: Make the preview area to be 1/4 of the area that it currently is. The main benefit from this is that photographers will be able to hold the device much more steadily than arms extended towards the subject with elbows spread apart. The device can be held closer to the eyes with upper arms closer body. More room is provides for gripping the device in various ways as hand(s) are not obstructing the preview so easily like they currently do. And, it also frees the rest 3/4 to be used for presenting critical info and controls. IMO, optimal way to use the current preview area would be:
a) 1/4 for the frame preview
b) 1/4 for presenting the area around active focus point, at actual pixel size
c) 2/4 parts for presenting critical info and control
Photographers need not to see a huge preview, a huge preview is counterproductive. Photographers needs be able to tap for exposure, focus and white point, and to see the general framing/composition, most importantly the four edges (to avoid cutting off e.g. some bodily parts).

What is the general condition of a cinematographer who does not know the current date, while recording? Open Camera has an option to show the time, in both photo and video recording modes. Seeing the time during video recording is, in some rare situations, actually helpful.
Aha, in case you mean to say that you'd like to have the date/time stamped (burned) to the video bitstream, that is an ultra bad idea. Open Camera has the proper solution for presenting the timestamp during playback of the video: Create "Video subtitles" file. It includes date/time and optionally more, as explained in the help page of Open Camera. All decent players are able to mux subtitle files during video playback.
