I prefer the 3:2 format of my dSLR cameras, and I wish the was a setting on my phone for that. On my ageing 2019 phone that would mean 4032x2688 out of the 4032x3024 pixels available.

My understanding is that OC provides photos in all the X by Y resolutions that the built-in camera driver announces to be available. What you are suggesting is default cropping (like blindly wasting some pixels).
More advantageous process is to capture all the pixels that the driver provides (in the chosen shooting mode) and then crop the photo by visual feedback, using a tool as: 'Simple Gallery - Photo and Video Manager & Editor' by 'Simple Mobile Tools', it is honest freeware app (donations allowed) such as the OC is, it does not require dubious permissions either (so it does not leak the photos to Google),and does not torment the user with ads. It has a cropping tool, you specify the cropping ratio and the app allows you to caress the cropping rectangle around over the original photo, and when the best cropping location is found, then crop+save.

You make a fair point, and I indeed already have precisely that app installed (F-droid rules!).
I not saying that what I'm proposing is for everyone at all times. But automated cropping is not alien to OpenCamera, it already exists in the form of Auto-level, a feature that I find useful yet flawed, because it makes the aspect ratio even worse than it already is. Taking your logic to its extreme, we don't need a choice of resolution at all, we can fix everything to our preference in post-processing.
I think we do need a choice of resolution, and more often than not (though not always), I'd like to have the option of 3:2 even though technically that involves cropping.
Perhaps it would be just as easy to create the option of a customizable aspect ratio, to suit anyone's taste.

But we do have a choice of resolution (Photo Settings / Camera Resolution). What OC does not have is a cropping tool ... because it is a camera app intended to take photos, not to cripple them. Doing cropping after the fact is a safeguard against heads with no hair, legs with no feet, etc. Also, having OC to crop the photos would slow down some important features such as burst shooting.

I'm not afraid of heads with no hair - obviously, the viewfinder should show the resulting image, as it does with any resolution setting.
And I absolutely agree that it's not to be used all the time. When your use-case favours another resolution setting than what I'm proposing, by all means use that.
I just wish I had the option to do what I propose here, as I find the factory aspect ratios a tad unaesthetic.

The right/proper party to present you request is obviously the manufacturer of your phone/camera. In case they turn their deaf ear to you, you also have the possibility to choose your phone/camera according to your aesthetics.
There are so many camera related functions that can be included into OC, I do not see any reason in spending time to evolve OC into the image editor side.

+1 for 3:2 shooting
I've just ran into this issue.
First year we ditch the camera the to rely only on phones. (4:3 or 16:9)
When I sorted/edited our pictures in December it turned out that many good looking pictures where impossible to arrange nicely for 10x15cm prints.
3:2 shooting at highest resolution with 3x3 grid is absolutely necessary.
I don't mind if a few useless pixels are cropped out is 10x15 printing won't be ruined
