If I fiddle with the settings behind the +/- icon (eg exposure compensation, manual ISO) it would be great to have continuous visual feedback not just the toast message. How about, when I've overriden the auto mode, turning the +/- icon red or putting an M icon below the ISO and shutter values? Or something

Actually, there is indication (the red color of the icon) but the logic is somewhat unexpected. I try to be concise:
1) tap the (-/+) icon, it immediately turns to red in color and the controls dialog is show in the center of the screen.
2) manually set ISO and shutter time.
3) take photos. While doing so the dialog stays on screen and the icon is red.
4) tap the (-/+) icon, it turns to white in color, but the manual settings stays in effect, if photos are taken, they abide the manual settings. As the icon in this case is white in color, there is no indication that manual settings are in effect.
One logical way of behavior would be to have it so that:
1) white color of the (-/+) icon indicates that all the controls of the dialog are in their default auto values. And red color of the icon indicates that some manual setting(s) are in effect.
2) a tap on the icon only toggles the visibility of the dialog, regardless of the color of the icon.
3) a long tap (or a double tap) on the icon while it its color is:
3a) Red, sets all the controls to their default auto values, hide the dialog away, and turns the color of the icon white.
3b) White, reload the manual settings that were most recently cleared.
