I made a tutorial3a package that has the Product that does NOT implement PersistenceCapable.  Modified build.xml to enhance Product after compilation. 

And it all works just fine.  Nothing broken.

I don't think, you are right regarding enhancers. Enhanced classes delegate a 
lot of work to the state manager (for example field access and status 
interrogation). So if a state manager is not present, it should not work.
