The easiest is to set the list to "subscriber post only".  This means 
that only registered list members can post, which filters out virtually 
all spammers.

For people whose post address is different from their subscription 
address (like it often is for me), Mailman has this lovely feature of 
being able to subscribe to a list but set it to "no mail", so you have 
your post address registered as a valid member, but it doesn't get the mail.
