My trying to enter new values for either a Range or a Scale for a Plot seem to have no effect on the displayed graph. When I later make some other change to the Plot, then the values that I have entered just get automatically replaced by the app's defaults.

You need to type the Enter key to issue new values you entered in the text fields.
