Quality mapper edit plugin has a preview toggle-button.
If you use it, even if you don't click on "apply", the vertex color changes permanently.

Try it yourself
- Run meshlab and open up bunny70k.ply
- Select Filter menu -> Color Creation and Processing -> Per-Vertex Quality function
- As function insert something pretty cool like "x + y + z"
- Apply it
- Open Quality Mapper editing tool
- Click on Preview button
- Close Quality Mapper tool
-> As you can see per-vertex color is modified
