Given

plot3d(g, [x, 0, 1], [y, 0, 1], [gnuplot_pm3d, false], [plot_format, gnuplot]);

the maxout.gnuplot file still contains pm3d directives. Here is the first part of the file:

set term wxt size 640,480 font ",12"; set term pop
set xyplane relative 0
set style line 100 lt rgb "#000000" lw 1
set pm3d hidden3d 100
set pm3d depthorder
unset hidden3d
set palette defined (0.0 "#00ff00", 0.33333334 "#00ffff", 0.6666667 "#0000ff", 1.0 "#ee82ee")
unset colorbox
set xlabel "x"
set ylabel "y"
set zlabel "z"
set xrange [0.0 : 1.0]
set yrange [0.0 : 1.0]
set datafile missing "NaN"
splot "-" title "g" with pm3d
