Sometimes an email is a request to do something at a
certain time. would be great if i could select a time for a
given ticket and put the ticket on hold. when its that time,
the ticket becomes open again.

This is an excellent idea, I think we should add it.
Also - it would be useful to be able to specify working days - there would
need to be an interface to allow the admin to choose which are working
days and which are holidays.
(Note most of this has already been done for our Freedom of Information
Act manager so we should be able to re-use some of this code in
