With standard automake tools, you would use "configure" with the "--prefix" option.  LMMS, though, uses cmake, so you change the install path with a command like:

cmake (path to root lmms dir) -DCMAKE_INSTALL_PREFIX=/usr

or whichever path you want to install to.  The default prefix is "/usr/local" as you pointed out.
