I've already considered eCos since I'd thought about TFTP boot.
An initial port for CqREEK SH-4(done by ry...@at...)
currently works fine on my own SH-7750 board (I was glad to see
your name in eCos' sources :->).

But I found it had only one diagnostic serial console and I
needed to port or write device drivers by myself, which might be
a little hard for me.  By eCos I plan to support SCI/F of
SH-4(interrupt driven driver), SMC91C96 Ethernet, and possibly
framebuffer and keyboard(as a diagnostic console).

I think so.  Full documentation is desirable.
