Have a desired isosurface as the current isosurface -- if necessary, use

  isosurface ID "...."

by itself to select.

Then issue:

show isosurface


From JavaScript, you could use:

var xmlData = Jmol.evaluate(jmolApplet0, "script('show isosurface')")
