Answer to question 2 is NO.

Actually, if a non GK player is substituted with a GK player
you're not playing with two keepers, you're just wasting a
player: for game routines there's only one Keeper, the first
one found with role = GK while scanning team and therefore
you'll be always playing with one goalkeeper BUT, since the
second keeper role is not DF, MF or FW its skills are
neither utilized in other parts of simulations.

Therefore, actually, adding a second keeper is equal to
remove one player from the pitch

Maybe it's better to avoid this possibility since it's
absolutely useless but for now, the game behaviour is ok.

I need still to investigate the first question though
