On Linux, add -Xms128m -Xmx256m to the comand line start up string. With KDE, I have this added to the shortcut that starts jEdit. On Windows, it's the same, but you can set in in the options for the jEdit launcher. If you used the Windows installer and used the default settings, you can go to Start/Programs/jEdit/Set jEdit Parameters, and add the settings to the "Command line options for Java application loader" box.
